Blueberry Oatmeal Bake

This is an easy and delicious breakfast alternative for all of those instant oatmeal eaters out there!  Recipe adapted from Whole Foods Market.

Canola oil cooking spray
2 cups blueberries
2 cups rolled oats
1/2 cup chopped pecans
1 teaspoon baking powder
1/2 teaspoon salt
1 large apple, peeled, cored, and grated
1 cup 2% milk
1/2 cup Chobani Blueberry Greek Yogurt
1/3 cup maple syrup
3 teaspoons vanilla extract
2 eggs
1 tablespoon Stevia (or regular sugar)

Preheat the oven to 375 degrees.  Prepare a 9 inch glass baking pan by coating it with cooking spray.

In a large bowl, whisk together the milk, yogurt, maple syrup, vanilla, and eggs.  Add the blueberries, rolled oats, pecans, baking powder, salt, and apple and stir well.  Pour mixture into prepared pan.  Sprinkle a little bit of Stevia on top and bake for 45-50 minutes.
